Middle eastern Hommus

A healthy, delicious protein rich snack

SERVINGS: 4-6 PREPPING TIME: 15 MIN + 8 HOURS SOAKING TIME

INGREDIENTS

  • 1 cup dried chick peas

  • 3 cups water

  • 1/3 cup tahini

  • ½ cup lemon juice

  • 2 or more cloves

  • crushed garlic

  • salt

DIRECTIONS

  1. Wash chick peas well, cover with water and soak overnight.

  2. Boil then simmer chick peas until tender in water used for soaking- you may need to add more.

  3. For best results, remove the skins from the chick peas- a tedious task! Most will float on the surface of the simmering water.

  4. Use a food processor to blend the chick peas, then add the other ingredients and continue blending until thick and smooth. Hold back some lemon juice and salt to adjust to taste.
