Baked Almond Fetta

Delicious rosemary flavour, perfect for pizza!

INGREDIENTS

  • 2 cups blanched almond meal

    3 tsp lemon zest

    4 tsp lemon juice

    2 tbs olive oil

    1/2-1 tsp salt (to taste)

    fresh rosemary twigs

     

DIRECTIONS

  1. Pre-heat oven to 200c

  2. Line a small spring form tin with baking paper

  3. Add all the ingredients except for the rosemary to a mixing bowl and knead it to form a ball (add a little more oil if too dry) 

    This is a good time to taste and add more salt or lemon juice to taste if needed

  4. Transfer it to the spring form tin  and press it flat.  Add the rosemary twigs on top.

  5. Bake in the oven for 20mins or till the top goes golden.

  6. Let it cool a bit then transfer from tin on baking paper.

  7. ENJOY! eat it on its own or put on pizza or pasta etc.
